Thursday kicked my ass

usually it’s not so busy on thursdays. which it really wasn’t. it’s the anticipation of Mother’s day. My first holiday to be working on. Mother’s day brunch… why? why must it be? but i guess it’s good for the restaurant right? i’m loving it and dreading it at the same time.

So what did I do on Thursday that made it so damn crazy? Prepping everything for the weekend. The time went by so friggin’ fast. Let me list the things I did yesterday:

Roast the artichokes

Roast baby carrots

Make brandade, the cod and potato paste that melts into gooey salty goodness.

Deep fry french onions, they are so damn good, for the soft crab tacos which by the way are so popular at the restaurant right now. they must be great, but I’m allergic to them.. oh woh is me..

peel a hotel pan of roasted beets

run to the cheese shop to get more cheese

grab the processor from the restaurant next store cause they borrowed it

go back next store and borrow some milk

prep the artichokes for service

knead the dough for the oatmeal raisin bread and bake it

and then get ready for service which is a whole other part of the night. not to mention the prep work I did during service.

epsotherapy salts.. holy crap they make my feet feel so much better. my toes are a bit numb, but i think they are just building some muscles.. not to mention my arms. i’m finding that i am staring and flexing to see how much more toned they are. my hands? my hand muscles are almost as big as when i worked as a stock girl breaking down boxes at the gap. if i made a fist you can see the buldging muscles on the back of my hand.. as if my hands weren’t already so damn alien like.. ok.. that’s it.. hope you enjoyed the entry.. xo.
