and we close at 11.. amazing.. i will never go into a restaurant late ever again.. i wanted to clean up so badly, but we had 2 more tables that just walked in. DOH! All i wanted to do was go home to my wife. i miss her. It’s weird having completely opposite schedules. i can’t wait to have a date night on Saturday.
these cooks are ridiculously amazing.. they have their timing right and they are calm and collective.. it sucks not knowing everything, but i’m learning and taking notes as much as I can… did i tell you what i learned to make today? chocolate chip cookies. ice cream base… churros batter.. holy cow..
